Curried Chickpea sandwich



This is a pretty basic recipe my husband and I came up with. We originally wanted to make the Sicilian version (non spicy) of our famous chick pea sandwiches, but we did not have any chick pea flour.
We used curry powder for seasoning, but if your taste buds prefer another spicy ingredient, you may use cayenne and red pepper flakes. You may also add lettuce, tomato, avocado and grilled vegetables.

Serves 6
Ingredients:
1 can of chickpeas
1 whole onion, shredded ( you may shred with a cheese grater)
2 tablespoons of curry powder (or whatever you prefer)
Flour to bind the patties together (we used about 1/3 cup)
Salt and pepper
Olive oil for frying

Directions:

Drain the chickpeas and pour them into a bowl. Mash the chickpeas, add shredded onion, curry powder and flour. Mix the ingredients and form into 6 patties.

Pour some olive oil in a non stick pan and add the patties into the pan.
Fry the patties on medium heat, until crisp and golden on each side.


Serve in a egg bun, ciabatta, panini, or whole wheat bread (if your watching your carbs) with Italian Bomba spread.

You may dress the sandwich with curry mayo, or Bomba (italian antipasto spread, which you can purchase at most supermarkets, or italian bakeries and deli's).
